New Restaurants and Summer Events to Know in Colleyville
For years, the running joke among people who live off Glade or Cheek-Sparger was that Colleyville Boulevard is where you drive through to get somewhere to eat. Grapevine to the north, Southlake to the east, Fort Worth thirty minutes west. That story is quietly falling apart.
In the last six months, a Fort Worth restaurant that has served the same block on Camp Bowie since 1993 announced its first-ever second location here. A champagne bar opened and started drawing weekend crowds. A donut shop and a smoothie counter filled in gaps residents had been complaining about for years. And the city itself has been publicly taking credit for signing the leases. If you live here, the corridor you drive every day is being rebuilt around you, and the summer calendar at City Hall Plaza is the easiest way to see it firsthand.
Zafiros Mexican Grill y Cantina closed at 5204 Colleyville Blvd in late 2024, and for most of last year the space sat quiet. That address is the reason the local dining conversation shifted.
Lucile's Stateside Bistro, which has been serving American favorites at 4700 Camp Bowie Blvd. since 1993, will open a second location in Colleyville, at 5204 Colleyville Blvd. in the former Zafiros Mexican Grill y Cantina, which closed in late 2024. After thirty-three years at a single Fort Worth address, owner Bob McLean picked this corridor for the expansion. According to a post from the City of Colleyville, the new location represents a long-term lease, bringing Lucile's established Fort Worth dining experience to Colleyville, where it will open in late 2026.
The city has been unusually vocal about the deal. In a statement, Colleyville Mayor Bobby Lindamood said, "We are excited to welcome Lucile's to Colleyville! With their strong following and high quality dining, they are a perfect fit for our community." The reason that matters: the lease represents a collaborative partnership between Lucile's restaurant, the property ownership, and the City of Colleyville, reinforcing continued investment and growth within the local dining and retail corridor. Translation for anyone who lives here: the city is not just permitting restaurants, it is actively courting the ones with a track record.
That is a meaningful shift. A thirty-three-year-old independent that could have gone anywhere in the Metroplex for its second location picked the same stretch of road you use to run errands.
Lucile's is the headline. The support cast opened without much fanfare, and if you drive Colleyville Blvd on autopilot you have probably passed them without registering.
Pop & Pour — Pop & Pour opened in Colleyville late May offering champagne, mimosas, sparkling wines and light bites such as charcuterie and hummus. This is the kind of small-format concept the corridor did not have a year ago. Useful for a slow Thursday when you do not want a full dinner reservation.
Rings Donuts — Now open at 1101 Cheek-Sparger Rd #103, a donut shop with specialty coffee and matcha drinks. Cheek-Sparger has been under-served for morning stops, and this address puts one within a five-minute drive of most of the neighborhoods east of Highway 26.
Smoothie King — Opening late August at 5615 Colleyville Blvd., a smoothie and wellness focused café offering blended drinks and light bites. Same shopping center as Loveria Caffe, which means one address now covers post-workout, dinner date, and dessert.
Take the four together and a pattern emerges. Colleyville is no longer filling in with fast-casual chains. The 2026 crop is beverage-forward, small-footprint, and independent or nearly so. That is what a corridor looks like when landlords are getting choosier about tenants.
The new arrivals matter partly because the incumbents keep raising the ceiling.
Loveria Caffe was named Best Authentic Italian Restaurant in Texas by Five Reasons to Visit, and also received "Best Lasagna in Texas 2026" from the same publication. The owners, Andrea and Stefania, are former architects in Italy who developed a rich understanding of what makes Italy and its cuisine beautifully irresistible, dreamed of merging décor, food, and wine into one experience, settled in Texas, and named the restaurant "Loveria," which means "irresistible." The address is 5615 Colleyville Blvd, Ste 410, the same shopping center where Smoothie King is going in.
A few doors down at 5003 Colleyville Blvd, Next Bistro focuses on fresh seafood, C.A.B. steaks and house-made desserts, with a Wine Spectator Best of Award winning 700+ bottle wine selection and a full bar featuring 125 single malt and blended Scotches. The kitchen is not resting on the list. Bubbles & Bites 2026 will feature the iconic Champagnes from Piper Heidsieck, joined by Jason Hisaw, Business Development Manager for Folio Wines.
Two things worth noticing. Both anchors sit on the same mile of Colleyville Blvd where Lucile's is going in. And both are staking their reputation on wine programs, which is what a mature dining corridor looks like when it is trying to hold customers past dessert instead of turning tables.
The city calendar is where the shift is easiest to see for residents who do not track restaurant news. One of the things that makes Colleyville a special place to live is the community's friendly, inviting hometown spirit, most evident when friends and neighbors come together for Special Events. Almost all of the City's special events are FREE of charge.
Free concerts at the City Hall Plaza. In 2026, the series is focusing on all tribute bands. All concerts are BYOB, no glass. Bring a picnic blanket or lawn chair. Parking is around The Village. If you have never gone, the practical tip is to arrive forty-five minutes before start time in July heat and set up on the west side where the building throws shade by seven.
The demand tells you what you need to know. Tables sold out as of May 19, 2026, with an email sent about waitlist status. Due to exceptionally high demand, further calls and emails are being added to the waitlist. Do not skip it just because tables are gone. Free lawn seating is available, and free bleacher seating has been added on the basketball court overlooking Heroes Park. The event is typically hot, so dress accordingly. Cooling stations and free bottled water are provided.
If you have lived in Colleyville more than three years and never made it to Stars & Guitars, this is the year to fix that. The table sellout in a single spring is the clearest sign that the city's programming has outgrown its old audience.
